I normally make this in a pasta pot, however I decided to freeze some leftover sauce from the original recipe I made and defrosted it at a later date to make this super easy one pot tray.

So it's definitely versatile and can be made in many ways!

Prep time: 20
Cook time: 40mins
Total time:

Yield: Feeds 4 Ingredients:
2 cans diced tomatoes
2 brown onions
3 cloves of garlic
1 kg minced meat
2 carrots
2 zichinni
1 red capsicum
1 green capsicum
2 cups shell or tube pasta
dried thyme

Instructions:

  • Use a machine to combine and make a puree of the onions, carrots, zhuchinni and capsicums. They should look diced really finely. I do this the night before.
  • Place a large stock pot on medium high heat and cook the minced meat with salt and pepper until brown.
  • Add the puree and stir to cook down. Once cooked, about 5 minutes, place on low heat and add the cans of diced tomatoes. Cook on low for about 20 mins.
  • Meanwhile, cook your pasta according to the packet instructions. Drain and place aside.
  • Grab a large oven tray and place the sauce then the pasta on top, combine all ingredients and stir.
  • Heat oven at 180 degrees fan forced and sprinkle some mozzarella cheese on top. Place it in the oven for about 10 minutes.
